001 — How It Began
From a Cabin to a Tavern
The Pinecone Tavern started as a series of summer dinners at a borrowed cabin in the Cascades. Twelve seats, one long table, dishes passed family-style. Most of it cooked over a fire pit out back. The guest list grew every weekend until the cabin couldn't hold it anymore.
Chef Lia Park and her partner, sommelier Jorge Mendoza, wanted to bring that feeling to the city without losing what made it work — the unhurried pace, the open kitchen, the sense that you'd been invited into someone's home. They found a 1920s storefront on a quiet block in Southeast Portland, with high ceilings, original brick, and the kind of bones you can't fake. Eighteen months later, the doors opened.
Today, the menu still changes with the season because the farms we work with do. We have two private rooms that have hosted everything from engagement dinners to quiet Tuesday-night birthdays. And many of the faces you see on the floor and in the kitchen have been with us since opening night — the kind of team that treats every reservation like it's the only one that matters.

What We Stand For

Source Honestly
We name the farms, the ranches, the boats. The menu changes when the season does. If we can't trace it, we don't serve it.

Your table is yours for the night. We never rush a course, never flip a seating, never make you feel like you should be on your way.

Lia Park
Chef & Co-Owner
Lia trained in Lyon and ran the kitchen at a Michelin-starred restaurant in Seattle before opening The Pinecone Tavern. She still writes every menu by hand, every Monday morning.
Jorge Mendoza
Sommelier & Co-Owner
Jorge curates a list that leans Pacific Northwest with deep cuts from small European producers. Ask him about Riesling — you'll be there a while, in the best possible way.
Imani Brooks
General Manager
Imani has run dining rooms from New Orleans to Portland. She is the reason your table feels handled the moment you walk in — and the reason you'll be greeted by name the second time.
Daniel Whitfield
Events Director
Daniel builds rehearsal dinners and private buyouts with the patience of someone who has done it five hundred times. Because he has. He'll think of three things you forgot.
